Chestnut honey is a dark type of honey with a complex flavor and aromatic smell. It is known for its anti-inflammatory and anti-bacterial properties and contains proteins, vitamins B and C and a variety of minerals such as manganese, potassium, calcium and iron. Unlike many other honeys, chestnut honey has a color ranging from yellow-brown to almost black, with very dark and intense amber hues. Due to its liquid consistency, which is a result of its high amount of fructose, chestnut honey does not crystallize. Its complex flavor is less sweet than other honeys, with a slightly bitter aftertaste that makes it suitable for savory dishes such as meats and aged cheeses, but less for sweetening herbal teas or teas. Chestnut honey is also an extremely powerful antioxidant and contains high levels of phenolic acid, making it an important food for fighting free radicals caused by several factors. Finally, thanks to its emollient and lubricating properties, chestnut honey can be used to treat respiratory infections, persistent coughs, sore throats and digestive problems, including gastric ulcers and the stimulation of bile secretion.

The stages of honey:

They are first opened by removing the wax, then they are placed in a honey extractor which acts by means of centrifugal force, this allows the honey to be expelled from the cells in a natural way.

Preparation:
At this point the honey must be filtered in order to eliminate various residues, for example those of wax or in any case small solid parts. The honey is then moved to a maturer for decanting.
In this phase, the air bubbles that have formed during the spin cycle come to the surface and must be eliminated with a slotted spoon. After which the honey is ready for the jars and to be tasted. Honey is just one of the bee products and is certainly the best known.
