The white truffle, known as the jewel of the earth, exudes an enveloping scent that will enrich your culinary preparations. Native to the Tuscan region, the tuber magnatum Pico has a globular shape, generally round with some irregularities on the surface (such as cavities and protrusions) and a slightly velvety texture. The color of this prized truffle varies from cream to ocher tones, remaining constant even when it reaches full ripeness. The internal part, called gleba, has a white and yellow-grey marble with white veins. Its intense aroma and flavor recall notes of parmesan cheese. The ideal way to enjoy it is to pair it with eggs (prepared in any way), fresh egg pasta or white meats. Try it also on truffle pasta and don't forget to enhance everything with our truffle butter, the condiment par excellence.

Storage:

Regarding storage, the white truffle should be stored in the refrigerator, wrapped in kitchen paper (it is recommended to change it daily when it becomes damp), and placed in a plastic or glass container. It is recommended to remove fresh truffles from the isothermal container in which they were shipped. The storage period in the refrigerator is between 5 and 7 days.

Preparation:

To prepare the truffle for use, it is recommended to brush it carefully, removing only the thickest layer of soil that surrounds it. This is because the earth residues provide a protective layer that helps the truffle to retain its unmistakable aroma. Washing the truffle should only take place at the time of use, using a toothbrush under running water. Cut thin slices directly on top of the hot dish to allow the heat to fully release its rich flavor.
